You might also try Googling Anthologies Accepting Submissions. Some of those publishers are looking for people to edit a complete anthology for them. Shop around it may take some time. The big thing today is anthologies with a particular theme. I own some very good ones. Send me info on your topic. Maybe I know some leads for you.
